Pork Prime Rib with Apple Glaze

INGREDIENTS

  • Bone-in pork roast

  • BBQ rub

  • 1 apple

  • 8-10 slices prosciutto

  • Butchers twine


Apple Glaze

  • 1T grated ginger & garlic

  • Splash of whiskey

  • 1/2 cup Apple cider

  • 1/2 Apple cider vinegar

  • 3T Soy sauce

  • 2-3T Brown sugar

  • All-spice & cayenne to taste


COOKING INSTRUCTIONS

Serves 4-6

  1. Cut slits between each bone (shown in above images) and season with your favorite BBQ rub.

  2. Slice apple (shown in above images), wrap in prosciutto and place in slits. Tie roast with butchers twine for more even cooking and better final presentation. Place roast on smoker and smoke between 225-275F.

  3. Make your glaze: Combine garlic and ginger in a pan with some oil, add a splash of whiskey and flambe (or just heat until alcohol is cooked off). Add apple cider, apple cider vinegar, soy sauce, brown sugar, all spice and cayenne. Let it cook down on medium heat. Once a glaze consistency is achieved, strain and set aside.

  4. When the roast hits 130F internal, paint with glaze and return to grill. Pull when the roast hits 140-150F (depending on desired doneness).

  5. Serve with a glass of whiskey and enjoy!
