The Black Hawk Beef Bomb

INGREDIENTS

  • 1 skirt steak

  • 2-3 packs of bacon


Filling

  • Small bunch of parsley

  • 1/2-1 jalapeño

  • 3-4T chopped bacon

  • 1 cream cheese packet (8oz)

  • Juice of 1/2 a lemon

  • 1T of BBQ rub or your favorite seasoning


COOKING INSTRUCTIONS

Serves 4-6

  1. Quick sear on skirt steak using grill or torch (optional step and don’t cook through).

  2. Make your Filling: Chop parsley, jalapeño and bacon. Combine with cream cheese, lemon and BBQ rub.

  3. Season beef lightly and add a thick layer of filling on top of the skirt steak. Roll tightly.

  4. Wrap and cover in bacon weave (tutorial on TikTok)

  5. Smoke at 225-275 until outside is crispy and internal temp of 135 on beef (~1hr). Oven also works!

  6. Let rest, cut against the grain, and enjoy!
