Taki Chicken Cordon “BLUE”

INGREDIENTS

  • 2 chicken breasts

  • ~6 slices of swiss cheese

  • ~6 slices of deli ham

  • 1 bag blue takis crumbled up (bread crumb consistency)

  • 2 cups flour

  • 4 eggs mixed for egg wash

  • Frying oil


Sauce

  • 3T mayo (I used spicy TRUFF Mayo)

  • 3T Ketchup

  • 1T worcestershire sauce

  • Garlic powder


COOKING INSTRUCTIONS

Serves 4-6

  1. Prepare the Chicken: butterfly your chicken breast and put between saran wrap. Flatten with a meat tenderizer then remove saran wrap. Season with salt and garlic powder. Add ~3 slices of ham and ~3 slices of cheese to the to the top of each chicken breast. Roll it up and cut into 1 inch circles (see above).

  2. Assemble: Place frying oil in a medium sauce pan (about 2 inches of it), heat to 300F. Place flour, egg wash and taki crumbs in three separate bowls. Dip the sliced chicken rolls into flour, egg wash then taki crumbs. Once oil hits 300F fry until the internal temp of the chicken cordon BLUE hits 155F.

  3. Prepare your Sauce: Combine the mayo, ketchup, worcestershire sauce and garlic powder. Mix.

  4. Plate and serve. Enjoy!
