5 Spice Ribs

INGREDIENTS

  • Rack of baby back ribs (membrane removed)

  • Salt & Pepper Based Rub (I used Killer Hogs AP)

  • Neutral oil


Glaze

  • 1 cup soy sauce

  • 4T rice wine vinegar

  • 1-2T sesame oil

  • 2/3 cup brown sugar

  • 2T grated ginger

  • 1t Onion powder

  • Sprinkle of 5 spice


Garnish

  • Scallions

  • Garlic

  • Habanero

  • Vegetable Oil

COOKING INSTRUCTIONS

Serves 3-5

  1. Cover ribs in oil, season thoroughly with AP rub, and season lightly with 5 spice powder. Smoke for 2 hours at 225F. Wrap in foil and smoke another 1-2 hours (until tender).

  2. Make your Glaze: Combine soy sauce, rice wine vinegar, sesame oil, brown sugar, grated ginger, onion powder & 5 spice. Simmer until thick.

  3. Prepare your Garnish: Heat oil to 300F, fry slivers of garlic and chop into bits. Cut the scallions the long way (see video for reference) and add them to ice water for 3 minutes for a curled look (if left in water too long they will uncurl). Slice habanero into thin pieces.

  4. Unwrap ribs and continue smoking for 30 minutes, painting several times with glaze. Remove ribs from smoker, add fried garlic, and top with scallions and habanero. Enjoy!
