Mango Tango Salmon Burger

INGREDIENTS

Salmon Patties (2 medium sized)

  • 1/2 lb fresh salmon diced

  • 1T fresh dill chopped fine

  • 1t Spiceology Mango Tango rub

  • Juice of 1/4 lemon

  • 2t non-fat Greek yogurt


Mango Salsa

  • 1 medium sized mango

  • 1T red onion diced

  • 1/2 red bell pepper

  • 1/2 medium avocado

  • 2T cilantro chopped

  • 1t Mango Tango rub

  • Juice of 1/2 a lime

  • 1T olive oil


Mint Yogurt Sauce

  • 2T fresh mint chopped

  • 1/2 cup yogurt

  • 1/2t Mango Tango rub

  • 1T mustard

  • 1t honey


Assembly

  • 2 brioche buns

  • 2 handfuls of arugula

  • 2 slices of tomato


COOKING INSTRUCTIONS

Serves 2

  1. Make the Patties: Finely dice salmon and chop dill. Combine with lemon juice, Mango Tango rub and greek yogurt. Mix well.

  2. Form into two patties, sear on medium heat in oiled pan for 2-3 minutes per side.

  3. Make the Salsa: Dice the mango, onions, red bell pepper, avocado and cilantro. Combine with Mango Tango rub, lime juice and olive oil. Mix well.

  4. Make the Mint Yogurt Sauce: Chop the fresh mint. Combine with yogurt, Mango Tango rub, mustard and honey. Mix well.

  5. Assembly: Toast brioche buns on oiled pan over medium heat. Add a tablespoon of sauce to both sides of bun and assemble burger in the following order: bun, arugula, salmon patty, slice of tomato, mango salsa, bun.

  6. Enjoy!
