Pork Belly Bread

INGREDIENTS

  • 1 pork belly (~12lbs)

  • BBQ Rub (I used Killer Hogs The BBQ Rub)


Glaze

  • 1 to 1 1/2 cups honey (depending on size of pork belly)

  • Juice from 1 orange

  • Zest from 1 orange

  • 1/2 cup chopped sriracha candied bacon


COOKING INSTRUCTIONS

Serves 6-8

  1. Cut pork belly into six strands (leaving top attached) and season all sides with BBQ rub - see above photo for reference. Braid into 6 strand loaf (how to).

  2. Smoke over applewood at 250F for 4-5 hours until it hits 155F internal.

  3. Make your sriracha candied bacon and glaze by combining the honey, orange juice, orange zest and chopped sriracha candied bacon. On low, stir for several minutes until glaze consistency and set aside.

  4. Once the pork reaches 155F internal, paint glaze on top and finish smoking until it has set (~15 min).

  5. Serve with homemade sesame ginger sauce or just by itself! Enjoy!
