Twice Baked Candied Bacon Sweet Potatoes

INGREDIENTS

  • 5 large sweet potatoes

  • 1 bag of mini marshmallows

  • 1/3 cup or 5-6T butter

  • 1/4 cup brown sugar (use less if you don’t want them as sweet)

  • 1/2t cinnamon

  • Juice of 1 orange

  • Candied Bacon

    • 1 pack thick cut bacon

    • 1-3T maple syrup

    • 1-3T brown sugar

    • 2t orange zest


COOKING INSTRUCTIONS

Serves 5

  1. Wash the sweet potatoes and poke a few holes in them (lets steam out as they cook)

  2. Cover them in a thin layer of olive oil

  3. Bake at 400F until fork tender

  4. While they bake, make the candied bacon:

    1. Cook bacon on medium heat until it just starts to get crispy, pour out most of oil

    2. Add maple syrup and brown sugar

    3. Continue cooking another couple minutes, mixing constantly to make sure sugars don’t burn

    4. Finish with orange zest

    5. Let cool and chop. Set Aside.

  5. Slice the potatoes in half (be careful they are hot!)

  6. Scoop the inside of the sweet potatoes (leaving about 1/4 inch in the sweet potato) and place into a bowl. Save the scooped out “shell” of the potatoes for later. Add butter, cinnamon, brown sugar, orange, and salt to the bowl of sweet potato. Mash the ingredients together to make the sweet potato filling

  7. Add the filling back into the sweet potato “shells”, smoothing off the top. Sprinkle the candied bacon on top

  8. Add the mini marshmallows and bake in a high heat oven. Once the marshmallows are golden brown, pull!

  9. Add more of that candied bacon and serve.
